I was thinking about this on my walk today, as you do and it occurred to me Dragons gets one hell of a rough deal in the wand making business.
I mean trees just get a branch or two cut off. Unicorns? Tail hair grows back I bet. Phoenix feathers? If nothing else it’ll come back on burning day.
But dragons? Heartstring! Literally a bit of it’s heart.
Do wand makers have to get their materials themselves? Ollivander referenced personally plucking a unicorn’s tail so... maybe? Are all wand makers also professional Dragonslayers?
That would explain why it seems to be the least popular core. I can’t think who had a dragon wand in the books, maybe Krum in combination with something else? It always seems to be unicorn hair or something more exotic.

Lucius has one in the movies, but I'm not sure about the books either.
